Yam in African food/ Culture and Cuisine.

This root vegetable is widely used in African cuisine, it must be cooked before eaten. it is important to minimize skin contact with raw yam peels, as this might result in skin itching.

African Yams can be eaten fried, boiled, broiled, roasted, barbequed or “reciped”. A common Nigerian recipe using the common yam variety is YAM and plantain porridge (ASARO).

Another common recipe using yam( water variety) is OJOJO, in the absence of required variety of yam, common yam or sweet potatoes can be substituted.
