I recently visited Nigeria and it was Mango season. If you have ever had the pleasure of plucking, washing and eating ripe mangoes from the tree, you have experienced a gastronomic bliss. We had two fruiting trees in the orchard (Insert) and on several occasions, I was able to eat freshly plucked mangoes. The experience I had inspired this chicken recipe, I hope you enjoy.
Ingredients
2 semi ripe Mangoes
Juice of 1 fresh lime
1 table spoon olive oil
6 pieces skinned Chicken Thighs (Cubed)
1/2 teaspoon each ( pepper,thyme and salt)
1 cube maggi
Other: Skewers
Direction
Thoroughly combine all of the ingredients. Set in the fridge to marinate for up to 4 hours or overnight.
Preheat the oven to 375 degrees
One skewer at time, arrange on the chicken and mango. ( I wrapped the skewer tips with some aluminum foil to prevent burning). Line a tray with some foil paper or cooking parchment, set the chicken skewers on the tray.
Bake the chicken for 25-30mins.

I doubt that I have eaten freshly plucked mangoes before, but this looks good. I think there is a Caribbean version of this too. Some of those mangoes don’t look ripe though. Does it matter?
Hooooo… you have to try fresh tree ripen mangoes, o so yum. I wanted the sweetness and tartness, so i selected one ripe and one unripe mango. You can choose to do two ripe once.
