One of the most popular street foods in Nigeria has to be Boli and Epa, you can find the sellers at every street corner at all times of day. I bought some boli & groundnut in Nigeria this past May, I paid #200 for one boli and a pack of groundnut. I remember the same thing costing me about #50 two years prior, don’t you just love the power of cost-push inflation in Nigeria.

I have been thinking about Christmas menu ideas for this year  and plantain inspired dishes are all over my radar. This is first of many Christmas inspired starters, you do not have to wait until Christmas to try this one.

Ingredients

  • 1-2 large unripe plantains
  • ½ cup groundnut – divided

Directions

  • Roast the plantains at 350 degrees for 15 minutes or until the plantain is almost cooked.Remove the plantains from the oven. Cut into two inch chunks

                                           –Conversely grill the plantains until almost cooked

  • Collapse each plantain chunk by gently pressing down on it with a plate. With a cookie cutter, cut out a shape from the flattened plantain

  • Return the plantains to the oven or grill for another 3 minutes or until completely cooked

-I used a stove top grill for this process

  • Puree half of the groundnut in a blender or food processor to make groundnut butter. Set aside . gently crush the other half groundnut. combine both Potenzmittel ohne Rezept

  • Top the cooked plantains with the groundnut mix

PS: You can use the cookie cutter idea for fried plantains as well. Fry the plantain chunks, collapse, cut into desired shape and re-fry. Happy cooking!
