Ingredient
- 1 whole catfish (cut and cleaned)
- 1 teaspoon peppersoup spice mix (ingredient below if you will like to make your own mix)
- 1 tablespoon oil of choice
- 1 cube maggi
- salt (to taste)
- stock or water (2cups)
- utazi or bitter leaf (a pinch)
Preparation
- Place cleaned fish in a pot, add in some stock or water, set the pot on medium heat. Add in the pepper soup mix, salt, maggi, oil and utazi
- Cover and simmer for 25mins

What you need for pepper soup mix
Equal portions of :
- allspice seed,
- anise pepper,
- anise seeds,
- cloves,
- coriander seeds,
- cumin seeds,
- dried ginger,
- fennel seeds,
- tamarind pulp and
- ground pepper.

I think scent leaf should be added at the end for the vegetable. if you want the taste a little bitter the utazi leaf is better instead of bitterleaf.
On washing the catfish. once you have cleaned it and removed the dirt and gills with cold water. pour hot water on top of the fish. you would see some white substance on the skin, ensure you wash it out till it’s clean. pouring of hot water on the fish also helps it to be strong so it does not break while cooking.

yes ooo… they do in my local store, it’s not actually a brand or anything; just the premixed stuff in a white container. I will take a picture for you next time I am at the store.
