This is my ridiculously easy one pot catfish stew, it’s my go to when I want a quick sauce for boiled yam, okra or rice. I shared the picture on instagram in December and I just realized I never shared the recipe. My bad :(. For those in Nigeria, fresh catfish is best. If you live outside Nigeria use defrosted Catfish, Basa or Snapper.

Ingredients
- 2 large catfish – 500g (gutted and cleaned)
- 2 cups Nigerian Stew Base
- 2 Tablespoons Vegetable oil
- Cameroon or cracked black pepper – 1 teaspoon
- Salt – taste
- Maggi – 2 cubes
- Thyme – ½ teaspoon
- Freshly grated ginger – 1 teaspoon
Instructions
- Cut fish into steaks and pat dry. Season with salt, and pepper. Set aside.
- Place a large pot on medium heat. Add in stew base, left over ingredients and 3 cups water. Cover and bring to a rolling boil.
- Reduce heat to below medium and add in the fish. Simmer for 25 minutes or until fish is cooked through
Great recipe! So simple and easy to make your own with some modifications.
Used fresh catfish fillets cut into three or four large pieces
Added one Korean white sweet potato cut into medium chunks into stew after it comes to a roiling boil
Removed fish pieces when fish was fully cooked (abt ten min) and allowed stew to cook for remainder of 25 min so potatoes were cooked soft and potato had added some thickness to stew
Left one piece of catfish in stew to cook along with potato so it disintegrates and added additional flavor and thickness
Added handful of cilantro to middle of stew and didn’t mix in with abt ten min left to cook
Removed cilantro, and fully cooked potatoes at end after turning off fire and added back fully cooked catfish
Could be eaten as western style soup if you leave based on additional thickness and flavor
Served with sushi rice, potato on the side and balsamic roasted cauliflower

This is one of my best easy go to soup, you can eat it with almost anything. Ithe doesn’t disappoint. I prefer to use palm oil.

I just finished making this catfish stew recipe and it is OMG DELICIOUS! I added 2 scotch bonnet peppers to make it spicy. I also boiled some yam for my husband to eat it with. He loved it. Will definitely be making it again! Thank you 9jafoodie!

As always ur dishes look very tasty….Wanted to make this today but I got confused where the recipe said the 2 tablespoon of oil should be divided. At which point do I add the other half…..
That was a typo. all the oil goes in with the stew.
I have noticed you do not use garlic or a lot of ginger in your cooking. Is that deliberate? Looking forward to trying this recipe.

yes, basa will work (Whole basa though, not fillet)
