Grilled Fish – BBQ / Oven Method
I wanted to prepare something special for my Husband’s birthday this year ( January folks :D ) but I didn’t plan ahead. So into the freezer I went (to actually get some chicken) but the bag of croaker fish looked more inviting. It’s winter in my part of the world so outdoor barbeque was out of the question, IÂ was able to achieve barbeque grade fish using my oven. This is a popular fish recipe amongst home grown Nigerians, do try it and let me know what you think.
Ingredients:

4 Medium size Croaker* Fish (Scaled and cleaned)
- Salt – To taste
- 2 cubes Maggi
- 1 teaspoons Black or Cameroon pepper
- 2 Tablespoons Vegetable oil
*you may substitute Croaker with Tilapia
Sauce
- 1/2 large onion – Chopped
- 1 red bell pepper (tatashe) – chopped
- 1-2 red chili peppers (Shombo or rodo )
- 1 cube maggi
- 1 tablespoon vegetable oil
Direction:
Prepare Sauce:
- Combine all sauce ingredients in a blender, pulse to a coarse texture. Set aside
Grill Fish
- Start by making 2-3 slashes on both sides of the croaker. Season with salt, maggi and pepper. Set aside to marinate for a couple hours or overnight.
- If using a barbecue grill:
- Preheat grill, brush seasoned fish with oil & cover with half of the sauce. Grill until cooked.
- If using an oven :
- Preaheat oven to 400F (Broil / grill setting)
- Place a large skillet or griddle on high heat, heat oil. Place fish in pan and sear on both sides
- Cover fish with half of the sauce
- Transfer fish to a lined oven tray. Place in oven and cook for 12-15 minutes or until cooked through
To serve
- Generously cover cooked fish with left over sauce. Serve with a side of fried plantains & rice.
Above is the special fried rice I served the fish with. Try it out using our Fried rice recipe combined with browned minced meat for a more traditional look. For a darker colored rice like mine, add in some dark soy sauce.
Please what advice can you give a beginner that want to start barbecue business??? And I suck when it comes to adding of salt to food how do I go about it please???
hi.when making a large batch how do you know how to spice them.i overspiced 10 of these today and i felt really bad.is there a way to determine the quantity even for chicken too..thanks
add salt individually. that’s the easiest way.
Hi Ronke. At the end, you said cover cooked fish with left over (raw) sauce and serve. Is this correct?
Good work. More power to your elbow but pls i want to know if puting the fish in a foil before grilling is neccesary n what’s the diff when you do so?
The foil helps to keep all the moisture in the fish so it doesn’t get dry.
Hi thanks for the posts. I noticed some Crocker fish taste bitter while some don’t. Please how do i different both in the market?
really? I have never experienced bitter croaker. I typically select the yellowish looking variety if that helps.

I smoked some croaker the other day. Not with the oven. I used the traditional method of coal pot. marinated the croacker in ginger, garlic and a lot of blended fresh pepper and salt. mine!! the whole neighborhood wanted to know what was going on in my house. The aroma was just fantastic.

You need to sear the fish on the stove first, this will allow you to get some color on the fish as well as lock in moisture. then transfer the fish to an oven tray to bake.

Yes you can. It will take a lot longer to cook the chicken through depending on the thickness (25-35 minutes). Checkout our grilled chicken recipe :
Awesome recipe, I live in Canada. I hope I can find Croaker fish at the superstore, absolutely love it.
Yes you can find croaker at Super tore. it’s in the bulk frozen fish side… same place they have tilapia. It’s usually packed in a white/yellow bag.
