I am super excited to bring you guys this recipe, I created it about two weeks ago because I had lots of excess plantains at home. I have recreated the recipe about 3 times since then and it turns out great every time. feel free to experiment with nutmeg, onions, Cinnamon, fish, shrimp etc in the recipe.
Ingredients
- 1 overripe plantain
- 1 table spoon flour or oatmeal powder
- 1/2 teaspoon baking powder
- 1 egg
Direction
Mash the plantain into a fine paste
Add in the flour, baking powder and egg. combine
Heat a lightly oiled frying pan over medium heat, pour or scoop in the batter. brown on both sides (~2mins each).
Serve and enjoy!
The third time I made the recipe, I added in onions and spices and served it as lunch.
I had four plantains but only used three eggs as the batter seemed overly eggy. Ended up adding a half cup of Trader Joe’s pumpkin bread and muffin baking mix to thicken it up a bit and give it more flavor. Also added half teaspoon salt. Delish!

I was surprised this turned out, maybe because I had tried the savoury plantain pancakes once and they had come apart in the pan, for some reason. However, these turned out so well, although on tasting the first, I found it was a little bland so I added onions and pepper with the rest of the batter, and they were scrumptious!
My toddler, when I gave him a small taste, abandoned his bread and eggs to finish the pancakes. His leftover eggs went well with the bit of pancake I was able to steal from under his nose! Next time I’ll add more flour as I wouldn’t want it to be as sweet. I took a picture and wish I could post it, but… Anyway, thanks for the recipe!

Made this with a quarter cup of whole wheat flour and added a pinch of curry and roasted cumin and served with some maple salmon. Best dinner I’ve had in a while. Thanks!

you can use a blender if you have one.
So i put some spin on this. I used 3 plantains and added 100ml of egg substitute, 1 tbp of almond flour, i tsp of cinnamon, and 1/2 tsp of vanilla extract. Then i poured the mixture in 4 ramekin bowls and baked at 350F for 20 minutes. So good!!

Who has tried it with oatmeal? how did it come out?
You can substitute plain flour for Oatmeal flour, it should work just fine. Make sure you mill the oatmeal into flour first.
I tried it with oatmeal and the taste was nice. I feel the oatmeal gives it a unique taste. I used the regular Quaker Oats as is, without milling. Once fried, you don’t exactly see or feel the oats but you can taste the flavour (in my opinion) :)

Talk about timely. Have a bunch of overripe plantains in my fridge. Would mos def try this out. However, I’m going to use pancake batter mix (the already packed,just-add-water kind) instead of flour, baking powder & egg (already contains those).

I will definitely be trying this over the weekend. Very little oil and ingredients that are on hand make the recipe even more appealing. Are those sliced cantaloupes in the main picture? Yum!

I’m confused like stella, this is the masa I know and have been making since thy kingdom come. Not to shoot down your good efforts but this is not a new invention.
Hi Ekene, plantain Masa is different in three ways. It doesn’t contain Baking powder ( which makes it a different texture), it’s never pan fried ( always deep fried) and it is approached as a snack and never a main course. This is something new in our kitchen and we are glad everyone that has tried the recipe likes it.
It is new to me ekene who is not familiar with Nigerian food. I appreciate reading and learning about it.

Haha!! I just did this. Matter of fact, it’s in my fridge as I speak. I had 6 over-ripe and fat plantains. Frying would’ve been a soggy oil filled mess so I decided to try the famous plantain masa. Since I can’t seem to follow recipes to the letter, I decided to invent mine as I go.
1. Ground the plantains in a food processor
2. Mixed in about 2 cups of regular flour
3. Added ground onions and ginger (I actually ground them with the plantain)
4. Added some salt and pepper and thyme
5. At first I tried deep fried but didn’t like the sogginess
6. So, I did a flat frying pan with little oil at a time.

Its somewhat readily available. I have purchased the spice supreme version/variant. Look out for it at stores like shoprite or goodies if available in your vicinity
cinnamon is found in the market in Nigeria as cinnamon. I’ve bought it severally in cans. go to a shop where they sell spices. sure you would find it there. the sticks are found in supermarkets also.
