This is a lunch or dinner version of our breakfast plantain pancake. It’s quick, delicious and a healthy way to make use of overripe plantains.
Ingredients
- 2 ripe plantain
- 1 egg
- Salt and pepper to taste
- 1/2 cup chopped vegetables
Direction:
- Mash the plantain into a paste. Add in all left over ingredients and stir to combine
- Heat a lightly oiled frying pan over medium heat. Scoop in one cooking spoon of batter and spread to form a circle. Cook on both sides until golden (~2- 3 minutes per side). Repeat step until all the batter is cooked.
Serve with fried eggs or stew.

I tried it and i really liked it. I found mine to be a little too moosh-y at first, maybe because my plantains were too ripe, so i added a little bit of flour and it worked great.

Can I use a gas cooker for the yam casserole instead of the oven

I don’t think you should use a blender, it will liquify the plantain.
