How yummy does this sound, guys? Cornedbeef stuffed yam pockets. It’s so so delicious. You already know I have a thing for local ingredients like yam, there is so much than can be done. We have created some 9jafoodie original recipes over the years, recipes like cupcake like yam cups, Yam casserole , steamed nest etc. All new approaches, all delicious; I sincerely believe that the creative possibilities are endless. My local Nigerian store started stocking yam on a regular basis and I am a little obsessed at the moment.
This dish was loosely inspired by stuffed yam balls. Since i didn’t want to deep fry (oil absorption is extremely high for mashed yam) and I still wanted a crusty shell, I decided to flatten them like pancakes and pan fry. The result was shear perfection – crust on the outside, soft and meaty on the inside. I thought having them as yam pancakes would be too basic, hence the stuffing. Feel free to just pan fry them and make yam pancakes if you prefer. I guarantee both adults and kids will thoroughly enjoy this healthier take.
- Yam Mash
- ½ small yam tuber (820g)
- 2 tablespoons butter
- 1 egg
- Salt and pepper – to taste
- Filling
- 1/4 can corned beef
- ½ large red pepper (Chopped)
- ½ large green pepper (chopped)
- 1 scotch bonnet pepper (Ata-rodo) (chopped)
- ½ small onion (chopped)
- 2 cloves garlic (minced)
- Salt – To taste
- 1 cube royco
- Other
- 2 tablespoons coconut or vegetable oil
- Peel, wash and cube yam. Place in a large pot, cover with water and set on medium-high heat to boil. Cook until yam is fork tender (20-25 minutes). Drain
- Place a large skillet on medium heat; add in all filling ingredients except corned beef. Stir-fry until fragrant. Add in corned beef and stir-fry for 2-3 more minutes. Remove from heat and set aside
- Mash cooked yam until smooth and free of lumps. Add in butter and salt. Combine thoroughly. Set aside to cool slightly then crack in egg. Thoroughly combine again. Rest until cool enough to handle
- Take a handful of yam and flatten until circular. Spread about 1 tablespoon of filling over flattened yam.
- Take another handful of yam-mix and flatten. Place atop the filled circle and press the edges to enclose. Gently press down on the stuffed yam using a slotted turner or similar flat spoon to further flatten.
- Place a large skillet on medium heat, add in the coconut oil. Gently place in the filled yam pockets and fry until golden. flip and fry on the other side.
Can this recipe be baked in the oven because frying is not healthy because wen u over heat the healthy oil (the coconut oil) the nutrients are gone?
Does this re-heat well? I would like to make these the day before and I want to be sure heating them up in oven will be OK.

yes – I actually used both interchangeably.
Gave this a go and it tastes great. Though I did have difficulty with mashing the yam. I cooked the yam a couple days prior and reheated it on the stove with a bit of water to soften it, but the mashing process was quite tough. Perhaps the yam wasn’t soft enough, or I didn’t use enough flour (I substituted milk and flour for eggs). The byproduct was sticky and a bit lumpy, but I went ahead with the subsequent steps, the pockets came out thicker than expected but still maintained its nice taste. Perhaps next time I’ll try to work with softer yams.
Yam at this time might be a little more difficult since we mostly have dry yam on the market, this is most likely why it was thicker than expected. That being said, I think it’s all in the cook. You want to make sure that the yam is fork tender (it should almost fall apart with you insert a fork into it). Also, it’s very important that you mash the yam while it’s still hot.

2 – 3 tablespoons. just add some to coat the pan before adding the patties in.

As long as the yam is well cooked, you can use your cooking spoon or spatula to mash it.
You don’t really need a food processor for this. :)

Can I add milk instead of eggs? Would that work? I don’t eat eggs :(
I also have the same issue and do not (read: cannot) eat eggs due to food allergies. Ronke posted the following above to another reader who asked a similar question:

Can I substitute yam with potatoes
Yes. however, potatoes have a higher water content and less starch than yam. you might have to add in a few handfuls of flour to make it firm enough. Do let me know how it turns out.
do we add salt and pepper to the yam when boiling?
Not while boiling, you add those when you mash the yam.
