My love for Suya spice though.. le sigh. Here is another suya spice inspired recipe, a mix of Nigeria and South America in one dish. I made use of store bought soft taco shells but feel free to make them yourself; all you really need are flour, salt, baking powder and oil. I really like this taco recipe from The Cafe.
This is a quick weeknight recipe, it takes about 20 minutes to prepare. feel free to play around with the vegetable toppings, I used a combination of things I had readily available. Basa fillet (a catfish cousin) was used, other great fish choices would be Tilapia, salmon, halibut or grouper.
Ingredients :
- 4 soft shell tacos (Flour Tortillas)
- 2 large fish fillets
- Salt – To taste
- 1 cube maggi
- 1 tablespoon suya spice
- 1 tablespoon oil
- Juice of half a lemon
Garnish: Tomatoes, avocado, onion and cilantro ( chopped and combined with some pepper and mayo)
Direction:
- Season the fish fillet with some salt, maggi and the suya spice. Set aside
- Set a large pan on high heat, add in the oil. Sear the seasoned fish on both sides to get colors on the fish. Reduce the heat to below medium, add in the lemon juice and cook the fish through (3-5 minutes depending on the thickness of the fish). Cut the fish into chunks
- Warmup the taco shells for 15-20 seconds. Divide the fish among the tacos and top with your vegetable garnish

I didnt buy those in Nigeria. You can check shoprite though or try the linked recipe for homemade shell.
