Hello 9jafoodie nation, hope 2015 has been good to you thus far. We have been cooking up a storm as usual, creating recipes and what not. We are dedicating the month of April to “30 Minute meals”, in as much as we love to cook, sometimes easy does it. we already have some great 30 minute recipes on the blog like our simple catfish stew, chicken suya salad, Yoruba style local jollof, indomie stirfry etc. We thought to push the envelope a little more with this series, hope you come along for the ride. We have 4 recipes planned, but there might be more. If you have any suggestions or ideas, please leave a note in the comment form. Onto it:
So Yam Bolognese hen :D – I’m sure some of you are like “Why so fancy 9jafoodie”, lol. I searched high and low for a name to give this 9jaoodie original creation but nothing else worked. So here you have it. Bolognese sauce is a meat-based Italian sauce typically served with pasta. I didn’t do a full on Bolognese sauce as you might have noticed with the absence of tomatoes. Feel free to add some chopped tomatoes and scent leave into the sauce for extra flavor.
I have a little obsession with the African Yam tuber I must say; it’s such a versatile ingredient and a very interesting part of our culture. Yam is celebrated all over Nigeria from the south, to the west. It is even said to be the reason for high twin births amongst Yoruba people. I also love that Yam is a locally grown ingredient, the more we use it for dishes other than boiled yam and pounded yam, the more we are able to stimulate our local agriculture sector; and maybe, just maybe reduce our reliance on imported rice.
- Bolognese Sauce
- 3 cups minced meat
- ½ teaspoon each (Ground – ginger, garlic and pepper)
- Salt – to taste
- 1 cube maggi
- 2 sprigs green onions – chopped
- 1 cup water
- 1 tsp. flour
- Pan Roasted Yam
- ½ medium yam tuber (900g) – peeled, cubed and wash
- Salt – to taste
- 3 tbsps. coconut or vegetable oil
- ½ tsp. ground pepper
- 1 small onion – thinly sliced
- 1 cube maggi
- In a pot, cover washed yam with water and set on medium-high heat. Boil for 15-18 minutes or until just fork tender. Drain and set aside to cool slightly.
- While yam is boiling. Place another pot on high heat; add in minced meat, spices, salt, maggi and chopped onion. Stir-fry for 5-7 minutes or until meat is browned and cooked. Add in 1 cup of water and flour. stir to combine. remove from heat and Set aside.
- Combine cooked yam with salt, pepper and maggi.
- Add oil to a skillet and heat until hot. Add yam. Allow the yam to brown underneath. Flip yam and brown on other side for 2-3 minutes. Add in onions and stir-fry gently for another 2-3 minutes.
- Add sauce into cooked yam. Cover and simmer for 5 more minutes. Serve and enjoy.

What a great idea…another great recipe! I was thinking of using puréed tomato to thicken the sauce kinda like a pasta sauce. I guess that will make it more like a yam and mince stew. Thanks for sharing this recipe x
You can definitely do that… I avoided tomato puree because I didn’t want to change the color of the dish.
I love the Yam, my children too. I live in Arizona in the USA, please can someone tell me how to grow the Yarn here everything grow in my back yard. This area was a farming area. Thank you much, remain Bless.

Do u ve to add flour?
No you don’t. The flour is meant to thicken the sauce, you can mash some yam into the sauce to achieve the same effect.
